Spicy Pimento Chickpea Salad Sandwich

Spicy Pimento Chickpea Salad Sandwich is a great choice for lunch.  It can be spread over delicious sourdough bread, like I did, or served on a bed of artisan lettuce.  It has a nice kick to it as well.  Enjoy!



Spicy Pimento Chickpea Salad Sandwich

1 19 oz. can of chickpeas, drained and rinsed
1/2 cup of green pepper, diced
1/4 cup of carrots, shredded
1 Serrano pepper, diced
3 to 4 sun-dried tomatoes, diced
2 medium green onions, chopped
Garnish with basil, chopped
Sourdough bread, sliced
Pimento Sauce:
5 tablespoons of vegan mayonnaise
1 to 2 tablespoons of pimento peppers, chopped
2 teaspoons of lemon juice
1/2 teaspoon of onion powder
1/2 teaspoon of smoked paprika
1/2 teaspoon of Italian seasoning
1/2 teaspoon of dried mustard powder
1/2 teaspoon of nutritional yeast
Pinch of black pepper
-Drain and rinse the chickpeas, transfer the chickpeas to a paper towel then use another paper towel for the top and roll back and forth with your hands to remove the skin.
-In a small bowl, combine the pimento dressing ingredients then set side.
-Add chickpeas to a large bowl. Mash with a potato masher or a fork until it appears flaky and well mashed. You can also use a food processor.
-Remove the stem of the Serrano pepper and cut in half. Scrap out the seeds from the center of each half, then chop fine.
-Add the diced green pepper, sun-dried tomatoes, shredded carrot, green onion and Serrano pepper.
-Add to a large bowl the chickpeas and veggies, then season with the pimento sauce, mix well. Toast sourdough bread if desired then, on a serving plate add sourdough bread, artisan lettuce and chickpea salad. Slice, serve and enjoy!
