Smoky Guacamole with Roasted Vegetables is delicious and full of flavor. It’s made with serrano peppers, red onions, grape tomatoes, minced garlic and, of course, avocado, just to name a few ingredients.
Smoky Guacamole with Roasted Vegetables
Ingredients:
4 avocados
1 Red onion, quartered
2 Cups of cherry tomatoes
2 Tablespoons of olive oil
2 Cloves of garlic, minced
2 Serrano chili peppers, halved
1 Cup of fresh basil, packed
1 Teaspoon of smoked paprika
Himalayan salt and pepper
2 Limes, (or as needed)
Tortilla Chips
Directions:
-Preheat the oven to 400F degrees.
-Add vegetables to a large bowl, then sprinkle olive oil and black pepper.
-Add to a sheet pan with parchment paper, then roast for 20 to 25 minutes or until they are caramelized and charred marks appear. Let the vegetables cool to a room temperature, then roughly chop in the food processor.
-Rinse out the food processor bowl and add basil, olive oil, lime juice from half of a lime. Pulse until smooth. Add the basil oil to the tomato mixture stir to combine.
-Cut the avocados in half and scoop out the flesh and add to a medium size bowl, mash with a fork or a potato masher slightly. Save some of the big chunks. Add the lime juice a little at a time, minced garlic, smoked paprika, 2/3 cup of the tomato vegetable mixture, Himalayan salt and pepper to taste. Combine ingredients. Chill until ready and serve with tortilla chips and enjoy!
