Sheet Pan Potatoes & Plant Based Sausage

Sheet Pan Potatoes & Plant Based Sausage are a delicious comfort food that is pretty easy to make.  Ingredients include red onions, carrots, string beans, baby red bliss potatoes and plant based Italian sausage.

 


 

Sheet Pan Potatoes & Plant Based Sausage

Ingredients:
8 oz. of fresh string beans, remove tips
1 pound of baby red potatoes
8 oz. of baby carrots
1/2 red onion, sliced
1 packages of plant based sausage, 2 sausages
1/2 medium red onion, sliced
1 lemon, optional
1 clove of garlic, minced
1/3 cup of plant based Parmesan cheese, optional
1/4 cup of olive oil
1 teaspoon of smoked paprika
1 teaspoon of Italian seasoning
1/2 teaspoon of onion powder
1/4 Teaspoon of Himalayan salt and pepper, optional
Garnish with fresh basil, chopped
Directions:
-In a cast iron pan, prepare plant based sausage according to directions on packaging. Slice sausage then set aside.
-Preheat the oven to 450F degrees.
-Cut the baby potatoes in half and add to a large bowl along with the baby carrots. Set aside.
-In a small bowl, add olive oil, seasoning, vegan Parmesan cheese, Himalayan salt and pepper. Mix ingredients, then add additional olive oil if it’s too thick. Pour half of the mixture in the bowl with the potatoes and carrots, then toss to combine.
-On a large baking sheet with parchment paper add carrots and potatoes and bake for 20 minutes.
-Prepare the string beans by snapping off the ends. Add to a medium size bowl along with the sliced onion, add remaining seasoning, toss to combine. Remove the potatoes and carrots from the oven and use a spatula to push them to one side of the pan. Add string beans and sliced onion. Make sure to space out vegetables so they can roast in the oven. Bake for about 10 – 15 minutes or until vegetables are roasted. Add sliced plant based sausage to the vegetables. Top with chopped basil. Serve and Enjoy!
