Sheet Pan Greek Plant Based Sausage

My Sheet Pan Greek Plant Based Sausage is a delicious meal that is full of flavor.  It is incredibly tasty and includes key ingredients like spicy, plant based sausage, roasted red and green peppers, white onions, Kalamata olives, and vegan feta cheese, to name a few.  Your family will  really enjoy this recipe because the entire meal is served on a sheet pan.

Sheet Pan Greek Plant Based Sausage


Ingredients:
1 Red pepper, sliced
1 Green pepper, sliced
1 White onion, sliced
2 Cups of cherry tomatoes, halved
1/2 Cup of artichoke hearts
1 Lemon, sliced
1 Package of 4 plant based sausage
2 Cloves of garlic, minced
1/4 Cup of olive oil
1 1/2 Tablespoon of balsamic vinegar
1/2 Teaspoon of smoked paprika
1 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/2 Teaspoon of pepper
2 Tablespoons of chopped basil
2/3 Cups of kalamata olives
1/4 Cup of vegan feta cheese

Directions:
-Preheat the oven to 400F degrees.
On a large baking sheet, add the chopped peppers, white onion, artichoke hearts, lemon wedges and tomatoes.
-In a small bowl mix together the garlic, olive oil, vinegar and seasoning, whisk ingredients. In a large bowl add vegetables then add 1/3 of the sauce over the vegetables and sprinkle with Himalayan salt and pepper, mix until well coated. Place the vegetables on a sheet pan with parchment paper. Bake in the oven for 25 minutes.
-While the vegetables are baking, cook the plant based sausage in a cast iron skillet according to directions on packaging then set aside.
-After 25 minutes, add in the chopped vegan feta cheese and olives. Brush the remaining sauce over the tray and return the tray to the oven to bake for another 5 -10 minutes. Remove from the oven and add the plant based sausage to the tray. Add chopped basil and enjoy!
