Roasted Vegetables With Plant Based Sausage

Roasted Vegetables With Plant Based Sausage is a hearty and delicious sheet pan meal.  Some key ingredients include Italian plant based sausage, russet potatoes, red and green pepper strips, carrots and grape tomatoes.

 


 

Roasted Vegetables With Plant Based Sausage
Ingredients:
12 oz. Italian plant-based sausage, sliced in rounds
2 Carrots, sliced
1-2 yellow potatoes, cubed
1 Pint of cherry tomatoes, sliced
1 Red bell pepper, sliced
1 Green bell pepper, sliced
1 Medium, zucchini, quartered
1 White onion, sliced
3 Tablespoons of olive oil
1 Tablespoon of Italian seasoning
1 Teaspoon of smoked paprika
Himalayan salt and pepper to taste
Sprinkle of chopped basil
Directions:
-Preheat oven to 400F.
-Line a baking sheet with with parchment paper.
-In a small bowl, add the Italian seasoning , smoked paprika, Himalayan salt and pepper, whisk and set aside. In a large bowl, add the vegetables and seasoning and drizzle the olive oil over the vegetables. Combine well, then add vegetables in a single layer on the sheet pan.
-Bake for 15 to 20 minutes or until potatoes are fork tender.
-Cook plant based sausage in a cast iron pan with 1 tablespoon of olive oil according to directions on packaging.
-Remove the sheet pan from the oven then slice two sausage links, add to the sheet pan with vegetables.
-Sprinkle with chopped basil and serve with quinoa or brown rice. Enjoy!
