Roasted Vegetable Fajitas

One of my favorite Mexican dishes is this Roasted Vegetable Fajitas.  I roasted some red and green peppers, white onions, and vegan Halloumi cheese to name a few ingredients.  The sliced jalapenos and taco seasoning gave the fajitas a great kick, and each one was full of flavor!  These would be great to serve during a Super Bowl gathering.

Roasted Vegetable Fajitas

Ingredients:
3 bell peppers, red and green, you can also use yellow, if you desire
1 White onion, sliced
6-8 Tortillas
1 Zucchini, sliced
8.8 oz. of vegan halloumi cheese, sliced in stripes
2 Tablespoons of olive oil
1 15oz can of black beans, rinsed and drained

Fajitas Seasoning
1 Tablespoon of Italian seasoning
2 Teaspoon of smoked paprika
1 Teaspoon of chilli powder
1 Teaspoon of onion powder
1 Tablespoon of Taco seasoning, or more if desired

Directions:
-Preheat the oven to 210C or 410F while you slice the vegan halloumi cheese, zucchini, onions and peppers. Then add them to a large bowl with olive oil.
Combine ingredients and add to a baking sheet with parchment paper.
-Place in the oven for 20 – 25 minutes, or until the halloumi and vegetables are cooked as desired. Serve on your favorite tortillas with salsa, beans or avocado and enjoy!
