Roasted Tomatoes and Hummus Toast

This is my tasty Roasted Tomatoes and Hummus Toast.  I made it by roasting some cherry tomatoes that had been covered in a blend of garlic, olive oil and balsamic vinegar.  I toasted some crusty sourdough bread and added a generous spread of hummus.  It was delicious!

Roasted Tomatoes & Hummus Toast Recipe

Ingredients:
2 Cups of cherry tomatoes on the vine, (if available depending on the size)
3 Cloves of garlic, minced
2 Tablespoons of balsamic vinegar
2 Tablespoons of olive oil
4-6 Tablespoons of plain hummus, according to your taste
4 Slices of sourdough crusty bread, toasted
Garnish with basil
Sprinkle with chopped almonds, without the skin

Directions:
-Preheat the oven to 400F
-Mix the garlic, balsamic vinegar, Himalayan salt and pepper and olive oil in a large bowl with the tomatoes. Combine well. Place the tomatoes on a baking sheet with parchment paper. Roast in the preheated oven for about 20 minutes, or until blistering and soft.
-Toast the bread then spread generously with the hummus. Arrange the toast between two plates and top with roasted tomatoes. (You can leave the tomatoes whole or chopped. Drizzle with a spoonful of olive oil, balsamic vinegar and chopped almonds. Enjoy!
