Roasted Ratatouille Vegetable Dish

This classic Roasted Ratatouille Vegetable Dish is absolutely delicious.  The key ingredients included zucchini, red onions, eggplant, artichoke hearts, green olives and green pepper.  This dish was full of flavor.

 


Roasted Ratatouille Vegetable Dish

Ingredients:
1 eggplant, chopped into 1 inch chunks
1 green pepper, seeded and sliced
1 pint of cherry tomatoes
1 zucchini, cut into 1/2 quarters
1 red onion, quartered
1/2 cup of artichokes
1/2 cup of green olives
1/4 teaspoon of red pepper flakes
1-2 teaspoons of olive oil
2 springs of fresh rosemary
Artisan Lettuce
Garnish with fresh basil, chopped
Directions:
-Preheat the oven to 400F degrees.
-Prepare a baking sheet with parchment paper then set aside.
-In a large bowl, add the eggplant, cherry tomatoes, green pepper, onions, artichokes, olives and zucchini. Add 1 to 2 tablespoons of olive oil. Sprinkle with red pepper flakes, Himalayan salt and pepper. Toss to combine then add vegetables to a baking sheet with two sprigs of rosemary. Roast for 20 to 25 minutes. Turn the vegetables every 15 minutes to brown evenly.
-Add artisan lettuce to a platter then top with roasted vegetables. Garnish with fresh basil and chipotle sauce or a sauce choice. Enjoy!
