Roasted Potatoes and Onions are a great side dish for Easter dinner. I used some petite red potatoes, roasted onions and spices to make this delicious dish. This recipe was quick and easy to make.
Roasted Potatoes and Onions
1 lb. of petite red potatoes halved
1 White onion, sliced in half
1 Teaspoon of Himalayan salt
1 Tablespoon of Italian seasoning
2 Cloves of garlic, minced
1 Teaspoon of black pepper
1/4 Cup of olive oil
2 Tablespoons of plant based parmesan cheese
-Preheat oven to 425F degrees.
-In a large bowl add the potatoes, onions, parmesan cheese, olive oil and spices then lightly toss to combine.
-Add the potato mixture to a casserole dish.
-Bake at 425F degrees for 50 – 60 minutes, check potatoes to stir and flip every 15-20 minutes . Remove from the oven and enjoy!
