Roasted Fajitas

I absolutely love Mexican Food, and these delicious Roasted Fajitas are a favorite recipe of mine.   I filled tortilla wraps with roasted red and green peppers, red onion, and strips of vegan halloumi cheese.  I also added my favorite spices, which included taco seasoning.  The vegan halloumi took on the flavor from the seasoning, much like tofu.  These fajitas were tasty and delicious, with a nice kick to them.

Roasted Fajitas

Ingredients:
3 bell peppers, red and green, you can also use yellow, told you already to if you desire
1 White onion, sliced
6-8 Tortillas
8.8 oz. of halloumi cheese sliced in stripes, Violife
2 Tablespoons of olive oil

Fajitas Seasoning
1 Tablespoon of Italian seasoning
2 Teaspoon of smoked paprika
1 Teaspoon of chilli powder
1 Teaspoon of onion powder
1 Tablespoon of Taco seasoning, or more if desired

Directions:
-Preheat the oven to 210C or 410F while you slice the vegan halloumi, onion and peppers. Then add them to a large bowl with olive oil.
Combine ingredients and add to a baking sheet with parchment paper.
-Place in the oven for 20 – 25 minutes, or until the halloumi and vegetables are cooked as desired. Serve on your favorite tortillas with salsa or avocado and enjoy!
