Roasted Edamame Salad with Vegan Ranch Dressing

Roasted Edamame Salad with Vegan Ranch Dressing is an awesome salad that is bursting with flavor.  Key ingredients include roasted edamame and chickpeas with delicious spices, white onion, red pepper, and romaine lettuce.  It was drizzled with a creamy vegan ranch dressing.



Roasted Edamame Salad with Vegan Ranch Dressing

2 cups of shelled edamame
½ cup of white onion, chopped
1 can of chickpeas
1-2 tablespoons of olive oil
1 tablespoon of Italian seasoning
1 teaspoon of smoked paprika
Sprinkle with black pepper
½ teaspoon of onion powder
½ cup of cucumber, chopped
½ cup of red pepper, chopped
Romaine lettuce, chopped
Sprinkle of carrots, shredded
Garnish with fresh basil, chopped
Vegan Ranch Dressing:
½ teaspoon of unsweetened almond milk
½ teaspoon of lemon juice
1 teaspoon of Italian seasoning
½ teaspoon of smoked paprika
Himalayan salt and pepper to taste
-In a small bowl, whisk all the dressing ingredients until smooth for about 10 seconds.   Taste and adjust dressing as desired. Set aside.
-Prepare a large baking sheet with parchment paper, set aside.
-In a large bowl, add the edamame and chickpeas, then Italian seasoning, smoked paprika, onion powder and olive oil.  Toss to combine.
-Preheat oven to 350F degrees.  Add vegetables to a baking sheet with parchment and roast for 20 minutes.  Remove baking sheet the oven and set aside to cool a little.
-On a serving plate add chopped romaine lettuce, cucumber, red pepper, onion, roasted edamame and chickpeas.  Top with shredded carrot and drizzle of vegan ranch dressing.  Toss to combine.  Enjoy!
