Roasted Cauliflower & Sweet Potato Meal Prep Dish

Try making this Roasted Cauliflower and Sweet Potato Meal Prep Dish for dinner.  It’s a healthy dish that is full of flavor with a subtle kick to it.

 


 

Roasted Cauliflower and Sweet Potato Meal Prep Dish

Ingredients:
1 small head of cauliflower, chopped into bite size florets
1 sweet potato, cut into 1 inch cubes
1 14 oz can of chickpeas, rinsed and drained
1 package of shredded cabbage and lettuce
1 cup of quinoa, dry
1/2 white onion, sliced
Seasoning:
2 tablespoons of olive oil, or as needed
1 lemon, juiced
1 clove of garlic, minced
2 tablespoons of sugar free maple syrup
1 1/2 teaspoon smoked paprika
1 Tablespoon of Italian seasoning
1/8 teaspoon of cayenne pepper
3/4 teaspoon of cinnamon
Directions:
-Preheat the oven to 425F degrees.
-Prepare quinoa according to directions on packaging.
-Rinse and drain chickpeas and pat dry.
-In a large bowl, add the olive oil, chickpeas, vegetables and seasoning. Toss to combine.
-On a baking sheet with parchment paper add vegetables and chickpeas. If it’s not enough room add to another baking sheet.
-Roast vegetables for 20-25 minutes, tossing halfway through until cauliflower and sweet potatoes are tender, crispy and golden. -Remove from the oven then add quinoa and cabbage mixture to a serving dish. Top with roasted chickpeas and vegetables. Serve with a delicious tahini sauce. Serve and enjoy!
