Roasted Cauliflower Hummus

My Roasted Cauliflower Hummus is made with creamy hummus and roasted cauliflower that has a spicy kick to it.  Check out the recipe below.


Roasted Cauliflower Hummus

2 Cups of plain hummus
1 Medium head of cauliflower, cut into florets
1/4 Cup of olive oil
1 Teaspoon of Italian seasoning
1 1/2 Teaspoon of smoked paprika
1 Teaspoon of onion powder
1 Teaspoon of cayenne pepper
1/4 Teaspoon of chili powder
1 Teaspoon of Himalayan salt
1/4 Teaspoon of Black pepper

-Prepare a baking sheet with parchment paper.
Set aside.
-Preheat the oven to 425F degrees.
-In a large bowl add cauliflower, spices and olive oil then lightly toss until coated.
-Place in a single layer on a baking sheet with parchment paper. Bake for 15 minutes, then flip and cook for 10 minutes or until fork tender. Remove from oven to cool a bit. Prepare hummus on a serving dish then add roasted cauliflower and drizzle with olive oil. Serve with pita bread, tortilla chips or vegetables. Enjoy!
