Ramen Vegetable Stir Fry is a delicious dinner made from ramen noodles, stir fry vegetables, sun dried tomatoes, and a spicy garlic and ginger sauce.
Ramen Vegetable Stir Fry
Ingredients:
1 9 oz. Package ramen noodles
18-22 oz. Stir fry frozen vegetables mix
1/2 Cup of fresh basil, chopped
1 Tablespoon of sesame oil
1/2 Cup of sun-dried tomatoes, chopped
Stir Fry Sauce
1/3 Cup of low sodium soy sauce
1/4 Cup of sugar free maple syrup or coconut sugar
1/4 Cup of water
2 Tablespoons of rice vinegar
1 Inch piece of fresh ginger, minced
2 Garlic Cloves, minced
1 Tablespoon of cornstarch
1/4 Teaspoon of red pepper flakes
1 Teaspoon of Kimchi sauce
Directions:
-Cook noodles accordingly directions on packaging.
-For the sauce, in a small sauce pan, whisk together the sugar free maple syrup, water, soy sauce, rice vinegar, kimchi, fresh ginger, garlic, cornstarch and red pepper flakes over low heat until combined. Set aside.
-In a wok, heat olive oil on medium heat add the vegetables and basil, sauté for 2-3 minutes then add the noodles and sun-dried tomatoes then pour the stir fry sauce over the noodles and stir for 4 minutes frequently. Season as desired with soy sauce and rice vinegar. Serve and enjoy!
