Ramen Noodle Salad with Peanut Dressing is spicy and delicious. It’s made with plant based ramen noodles, green onions and cole slaw for some key ingredients. I topped it off with a tasty peanut dressing. It’s a great recipe to make for lunch or for dinner.
Ramen Noodle Salad with Peanut Dressing
Ingredients:
2 blocks of ramen noodles
4-5 cups of coleslaw mix
1 green bell pepper, chopped
1/2 cup of green onion, sliced
1/2 cup of walnuts, chopped fine
Peanut Dressing:
1/3 cup of creamy peanut butter
2 tablespoons of lime juice
2 tablespoons of sugar free maple syrup
2 tablespoons of kimchi sauce to taste
1 clove of garlic, minced
1 tablespoon of fresh peeled ginger, grated
Directions:
-Cook ramen noodles according to package directions. Your can also break the noodles into small pieces, as desired.
-When the noodles are cooked, rinse them thoroughly in water then drain and cool.
-In a large size bowl, combine all the ingredients along with the noodles and peanut butter dressing. Toss to combine, you can serve along with sides . Enjoy!
