Quinoa Burgers with Kale Slaw

Try making this tasty Quinoa Burgers with Kale Slaw dish for lunch.  These burgers are a high fiber, super food made from red lentils and quinoa.  And the kale slaw is rich in antioxidants and drizzled with an amazing ranch dressing.

 


 

Quinoa Burgers with Kale Slaw

Ingredients:
½ cup of quinoa, dry
½ cup of red lentils, dry
1/5 teaspoon of turmeric
1/5 teaspoon of smoked paprika
1 teaspoon of Italian seasoning
½ cup of water
2 egg replacers or 2 tablespoons of flax seeds
1-2 tablespoons of olive oil
Kale Slaw:
2-3 cups of Kale in a bag
1 clove of garlic, minced
1/3 cup of vegan mayo
10 basil leaves
1 tablespoon of olive oil
1 tablespoon of apple cider vinegar
Sprinkle Black Pepper
Directions:
Quinoa Burgers: In a large pot of water add 1.5 cups of water, add the quinoa and red lentils.  Combine ingredients and bring to a boil.  Reduce heat and simmer for 15 minutes or until the water is completely evaporated.
-Prepare Kale Slaw: Wash and dry the kale green leaves, then set aside.  In a small bowl, add the dressing ingredients, whisk until combined.
-Add the cooked quinoa and lentils into a bowl and fluff to release the steam.  Let the quinoa and lentils cool for about 30 minutes.
-In a medium size bowl, add the quinoa and lentil mixture, Italian seasoning and 2 egg replacers.  -In a small bowl, add egg replacers, (Bobs Red Mill), according to directions on packaging.  You can also use flax seeds with 2 tablespoons of water, let it thicken up then add the quinoa mixture. Mix with a spatula or your hands to knead until the egg replacer is incorporated very well.
-Add 1-2 tablespoons of olive oil to a cast iron pan then heat pan, then divide into 4 round thick large patties.  Place patties in the hot pan.  Fry for 3-5 minutes on one side then flip for another 3-5 minutes on the other side until golden.
-Remove the patties from the pan then place on a plate.
-In a medium size bowl, add the kale slaw and dressing.  Toss salad ingredients well then place on a serving plate. Top with a quinoa burger, shredded carrot and a dollop of hummus. Enjoy!
