Plant Based Tex Mex Be’f Chopped Salad is a favorite Mexican dish that is packed with authentic, Southwest flavor.  It’s a great lunch or dinner dish that has a spicy kick to it.

 


 

Plant Based Tex Mex Be’f Chopped Salad

Ingredients:
2 Tablespoons of olive oil
2 Cups of artisan lettuce, chopped
2 Roma tomatoes, diced
1 Cup of corn kernels, fresh or frozen
2 Green onions, sliced
1 15 ounce can of black beans, drained and rinsed
1//2 Cup of vegan feta cheese, crumbled
Juice of 1/2 lime
Sprinkle of tortilla chips, crushed
Garnish with basil, chopped
Directions:
-In a large cast iron skillet, add 2 tablespoons of olive oil and plant based crumbles. Cook according to directions on packaging.
-In a large bowl, mix salad ingredients together then plant based crumbles. Gently toss until combined.
-Add salad to a serving plate, drizzle your favorite dressing and enjoy!
