Plant Based Steak Burrito Salad

Plant Based Steak Burrito Salad is bold and full of flavor.  Ingredients include plant based steak tips, roasted red, green and yellow peppers, pico de gallo, and plant based sour cream.  The flavor is authentically tex mex.

 


 

Plant Based Steak Burrito Salad

Ingredients:
1 package of plant based steak
1 white onion, chopped
1/2 red bell pepper, sliced thinly
1/2 green bell pepper, sliced thinly
1/2 yellow bell pepper, sliced thinly
1 -2 tablespoons of olive oil
1 1/2 Tablespoon of taco seasoning
1 teaspoon of Italian seasoning
1 container of pico de gallo, (you can also prepare your own pico de gallo as desired )
Directions:
-Preheat oven to 400F.
-Prepare a baking sheet with parchment paper. Set aside.
-Add the sliced and prepared vegetables to a large bowl then add taco seasoning, Italian seasoning and olive oil. Toss to combine.
-Place vegetables on a baking sheet and roast for 20 to 25 minutes until done then remove from oven.
-While the vegetables are roasting, add olive oil in a cast iron skillet. Then add the plant based steak and sauté according to directions on packaging. Add Himalayan salt and pepper if desired.
-Transfer plant based meat to a serving dish, then add roasted vegetables, pico de gallo, sliced avocado and garnish with vegan sour cream, chopped basil and chipotle dressing. You can also use a dressing you like. Enjoy!
