Plant Based Sausage with Chipotle Cheese Sauce and Corn Relish

My Plant Based Sausage with Chipotle Cheese Sauce and Corn Relish is a great meal for grilling season.  I used some delicious, hot Italian plant based sausage, sautéed corn and chopped white onion.  The sauce was made using melted vegan cheese, chipotle peppers, and green chili’s and it had a spicy kick to it!

Plant Based Sausage with Chipotle Cheese Sauce and Corn Relish


Ingredients:
Chipotle Cheese Sauce:
2 Tablespoons of vegan butter
2 Tablespoons of gluten-free all purpose flour
1 Cup of unsweetened almond milk
1 Cup of nondairy shredded cheddar cheese
4 Ounces of canned green chilies
6 Ounces of canned petite tomatoes, drained add diced
Himalayan salt and pepper

Corn Relish:
1 White onion, chopped
1 1/2 Cups of corn, thawed
1 1/2 Tablespoon of fresh basil

Directions:
-To make the cheese sauce, in a large saucepan, melt the vegan butter over medium heat. Then add the flour and whisk until golden for about 1 minute. Add in the nondairy milk and whisk until slightly thickened about 5 to 6 minutes. 1/4 Cup increments, add the shredded cheese to the milk. Make sure each batch added is melted before adding the next one. When the cheese is melted, stir in chilies, tomatoes and chipotle peppers. You can add more cheese if needed to thicken also. Season with Himalayan salt and pepper. Set the sauce on low on the stove as you continue to prepare other ingredients.
-In a large non-stick cast iron skillet add chopped onion, corn and dash of Himalayan salt and pepper. Cook for 3-4 minutes or until vegetables are tender. Stir in fresh basil adjust seasoning to taste.
-In another pan sauté plant based sausages according to directions on packaging. Assemble your plant based sausages in the sausage buns with corn relish and chipotle cheese sauce. Enjoy!
