Plant Based Pizza Soup

Everybody loves pizza:  what about in soup?  Plant Based Pizza Soup is hearty and full of flavor.  Vegetables like corn, cauliflower, green and red peppers, and cherry tomatoes are included in the soup.  They are combined with spicy vegan crumbles and a creamy tomato paste.

 


 

Plant Based Pizza Soup

Ingredients:
1 medium size onion, chopped
1 clove of garlic, minced
1 green pepper, chopped
1 red pepper, chopped
½ head of cauliflower, cut florets
1 cup of cherry tomatoes, cut into halves
3 cans of tomato paste
1 tablespoon of Italian seasoning
1 teaspoon of smoked paprika
3 tablespoons of Nutritional yeast, optional
1 cup of frozen corn, optional
1 13.5 oz. can of coconut milk
3-4 cups of vegetable broth
1 tablespoon of olive oil
Sprinkle of black pepper to taste
Directions:
-Add the plant-based crumbles to a cast iron skillet with 1 tablespoon of olive oil, sauté until browned.  Prepare according to directions on packaging.
-In a large stock pot, add 1 tablespoon of olive oil, chopped onion and garlic.  Sauté’ for 2 to 3 minutes, then add the chopped red pepper and green pepper to the pot and sauté’ for another 3 minutes.  Add the spices and cook for another 2 minutes.  Add the tomato paste, vegetable broth and coconut milk. Combine ingredients.
-Cut the cauliflower florets and cherry tomatoes into halves. Set aside.
-Add the tomato paste, vegetable broth and coconut milk, stir ingredients.    Then add the cherry tomatoes and cauliflower and simmer for 15 minutes on medium heat.
-Add the vegan crumbles and stir ingredients, season with pepper.
-Serve in a bowl then sprinkle with fresh basil and crusty baguette bread.  Enjoy!
