Plant Based Burger Salad Meal Prep Bowls

Plant Based Burger Salad Meal Prep Bowls are a delicious way to set up the week’s lunches.  Made from plant based ground meat, vegan feta cheese, grape tomatoes and fresh spinach, these bowls are topped off with a tasty dressing.  They are quick and easy to prepare and will become a healthy, go-to meal prep recipe.

 


 

Plant Based Burger Salad meal Prep Bowls

Ingredients:
1-2 tablespoon of olive oil
2 tablespoons of spicy taco seasoning
2 tablespoons of Enchilada sauce, or as desired
1 white onion, chopped
1 pint of cherry tomatoes, halved
Sprinkle of Feta Cheese
Spinach
Directions:
-In a cast iron skillet over medium heat, add the garlic, chopped onion with 1 tablespoon of olive oil and saute for 5 to 7 minutes then add the plant-based ground beef and taco seasoning.  Cook until golden, breaking it up.  Add the enchilada sauce and sauté until fully cooked through.  Set aside.
-In a meal prep dish, assemble the spinach, cooked plant-based burger, tomatoes and vegan feta cheese.  Drizzle your special dressing. Add your favorite fruit to the meal prep dish and enjoy!
