This Pesto Gnocchi is a quick and easy dish that is bursting with flavor. The key ingredients are slivered almonds, roasted cherry tomatoes, vegan parmesan cheese, homemade pesto sauce and gnocchi. Absolutely delicious!
1 package of gnocchi
1 pint of cherry tomatoes
2 cups of fresh basil leaves
1 cup of fresh cilantro
1/3 cup of olive oil
1//2 cup of slivered almonds
1 clove of garlic, minced
1/2 teaspoon of crushed red pepper flakes
1 teaspoon of Himalayan salt
Preheat oven to 400F.
-Add cherry tomatoes to a baking sheet with parchment paper. Sprinkle olive oil lightly on top of the tomatoes and roast for 20 – 25 minutes.
-In a medium size pot, prepare gnocchi according to directions on packaging.
-Drain and set aside.
-Toast the slivered almonds with one tablespoon of olive oil over medium low heat until just starting to turn golden brown.
-In a blender or food processor, combine all the ingredients together. Process until you reach your desired consistency. Add additional seasoning as desired, (lemon juice, garlic or red pepper flakes) and combine ingredients until smooth. Set aside.
-In a large pot, add the cooked gnocchi, roasted tomatoes and pesto sauce. You can also add a little vegan Parmesan to taste. Toss to combine. -You can add a little water as needed to loosen the sauce for even coating. Serve immediately and enjoy!
