Peach Cobbler is a delicious, spring dessert that is full of flavor. This cobbler has a flaky, crumb topping and a tasty, peach filling.
Peach Cobbler
Ingredients:
Peach Filling:
7 Peaches, sliced
1/2 Cup of blueberries, (optional)
1/2 Teaspoon of cinnamon
1/4 Cup of coconut sugar
1/4 Cup of gluten free all purpose flour and 2 tablespoons cornstarch, add to thicken your peaches.
Batter:
1 Cup of gluten-free all purpose flour
2 Teaspoons of baking powder
3/4 Cup of organic sugar
1/4 Teaspoon of Himalayan salt
3/4 Cup of unsweetened almond milk
1/2 Cup of vegan butter, dairy-free, 1 stick
Directions:
-Preheat the oven to 375F. Melt vegan butter in a cast iron skillet on the stove top. Set aside.
-In a large bowl, add sliced peaches and blueberries, optional, coconut sugar and cinnamon. Then add 3 tablespoons of cornstarch to thicken, Mix ingredients.
-In a medium size bowl, mix the flour, sugar, baking powder and Himalayan salt. Gently add the almond milk a little at a time until smooth. -Then pour the batter mixture over the butter in the skillet. Add the peach mixture on the top.
-Prepare to bake at 375F for 40 minutes or until golden brown. Serve with nondairy vanilla ice cream. Enjoy!
