Pasta Dish With Plant Based Meat

For a hearty and delicious dinner, try this Pasta Dish with Plant Based Meat.  Some key ingredients include chickpea pasta, plant based meat and green lentils.  This is a one pot dish that only takes 30 minutes to make.



Pasta Dish With Plant Based Meat

½ carrot, diced
green onions, thinly sliced
1 green pepper, chopped
1 jar of sundried-tomatoes, chopped
1/2 cup of dry lentils rinsed and drained
½ teaspoon of smoked paprika
1 teaspoon of Italian seasoning
Sprinkle of black pepper
1 clove of garlic, minced
2 cups of marinara sauce
2 teaspoons of soy sauce, low sodium
1/3 cup of coconut milk
1 tablespoon of olive oil
-In a medium size pot of boiling water, prepare chickpea pasta according to directions on packaging.
-In a cast iron skillet, add the plant-based ground Be’f and 1 tablespoon of olive oil.  Prepare according to directions on packaging.
In a saucepan prepare the lentils according to directions on packaging.
-In a large pot, add the olive oil and swirl around the pot then add green onions, carrots, sun-dried tomatoes, green pepper and minced garlic.  Stir and sauté until the vegetables are very tender and slightly caramelized for about 8 minutes. Lower the heat to low so the vegetables don’t brown too fast.
-Add the tomato paste, soy sauce and marinara sauce to the pot and stir for about 10 minutes to simmer with a lid partially covering the pot.  Add the drained lentils, chickpea pasta and plant-based meat.  Add seasoning and stir until combined.  Serve with chopped basil and hot crusty bread.  Enjoy!
