Oven Roasted Corn

This is a savory and delicious Oven Roasted Corn, which was topped off with a harissa sauce that added a spicy, flavorful kick.   By roasting it in the husk, the corn came out tender and moist.

 


 

Oven Roasted Corn

Ingredients:
6-8 corn cobs
3 Tablespoons of Vegan butter, or as desired
3 Tablespoons harissa paste
1 Teaspoon of smoked paprika
3 Tablespoons of lime juice
1 Clove of garlic, minced
Directions:
-Preheat the oven to 350F/176C. Place the corn husks directly on a rack or on a baking sheet with parchment paper and roast for 30-40 minutes in the oven. Then make the harissa sauce, combine the harissa paste, spices, lime juice and garlic in a small bowl. Then when the corn is done, cut the corn in half and peel husks and top with vegan butter and harissa sauce. Garnish with basil and enjoy!
