These Oatmeal Cookie Bars are deliciously moist and delightfully tasty. They are decadent and they are a great source of fiber since oatmeal is a key ingredient. They make for a good breakfast.

Oatmeal Cookie Bars
Ingredients:
4 Cups of gluten-free rolled oats
1 Cup of peanut butter or a nut butter you desire
1/4 Cup of sugar free maple syrup
1 1/2 Cups of mashed bananas
1 Cup of dark nondairy chocolate chips
Directions:
-Preheat the oven to 350F/180C. Line an 8 x 8 inch square pan with parchment paper, reserving 1-2 inches of parchment paper over the sides of the pan. This will help you to remove the bars.
-In a large mixing bowl, add all the ingredients, except for the nondairy chocolate chips and combine well. Fold in the chocolate chips, reserving a few for the top of the cookie bars.
-Transfer the batter into a lined pan, add extra chocolate chips on top. Bake for 15-17 minutes or until just beginning to turn golden brown around the pan.
-Remove from the oven and let sit for 10 minutes before moving to a wire rack to cool completely. Cut in squares and enjoy!
