Mom’s Organic is one of a handful of markets where I can purchase my recipe ingredients.  The others include Whole Foods MarketWegmans and Sprouts Farmers Market.  If you’d like to see some awesome kitchen essentials check out the ones on my Shop Page.

Oatmeal Cookie Bars

Ingredients:
4 Cups of gluten-free rolled oats
1 Cup of peanut butter or a nut butter you desire
1/4 Cup of sugar free maple syrup
1 1/2 Cups of mashed bananas
1 Cup of dark nondairy chocolate chips

Directions:
-Preheat the oven to 350F/180C. Line an 8 x 8 inch square pan with parchment paper, reserving 1-2 inches of parchment paper over the sides of the pan. This will help you to remove the bars.
-In a large mixing bowl, add all the ingredients, except for the nondairy chocolate chips and combine well. Fold in the chocolate chips, reserving a few for the top of the cookie bars.
-Transfer the batter into a lined pan, add extra chocolate chips on top. Bake for 15-17 minutes or until just beginning to turn golden brown around the pan.
-Remove from the oven and let sit for 10 minutes before moving to a wire rack to cool completely. Cut in squares and enjoy!
