Nondairy Strawberry Blueberry Yogurt Popsicles are the perfect, healthy summer dessert. Made from crushed strawberries, blueberries and nondairy yogurt, these popsicles are flavorful and delicious. Best of all, they are quick and easy to make.
Nondairy Strawberry Blueberry Yogurt Popsicles
Ingredients:
Blueberry and Strawberry Layer:
1 cup of blueberries
1 cup of strawberries
1 tablespoon of agave, plus more to taste for the strawberries and blueberries
2 tablespoons of water
Yogurt Layer:
Directions:
-In a cast iron skillet, add the blueberries , 1 tablespoon of agave and 2 tablespoons of water. Cook for 5 to 10 minutes then mash fruit as it cooks into preserves. Set aside.
-Remove blueberry preserves from the pan to cool. Wash pan then add strawberries with 1 tablespoon of agave and 2 tablespoons of water. Repeat cooking process the same way as blueberries.
-In a medium bowl, add yogurt.
-In a popsicle tray add 1-2 tablespoons of the yogurt layer into the bottom of the popsicle mold, then add 1 tablespoon of blueberry layer , then strawberry layer. Repeat until molds are just about full – filling to the top line. Use a toothpick or knife to swirl each popsicle as desired. Add the top to the mold and insert the popsicle sticks.
-Place the filled popsicle mold into the freezer overnight until frozen.
-Remove popsicle molds from freezer then place the bottom of the molds in some warm water for a minute or two to remove the popsicles. Enjoy!
