Nondairy Chocolate Raspberry Coconut Cups

Nondairy Chocolate Raspberry Coconut Cups are a healthy and decadent dessert treat.  You only need a few ingredients to make them.  They are absolutely delicious.

 


 

Nondairy Chocolate Raspberry Coconut Cups

Ingredients:
Chocolate Layer:
1-2 tablespoons of coconut oil
Raspberry Coconut Layer:
1/2 cup of fresh raspberries
1 tablespoon of coconut flour
1 tablespoon of sugar free maple syrup
Directions:
-Prepare a round silicone pan with silicone cup cake liners. Set aside.
-Chocolate Layer: In a double boiler, add nondairy chocolate chips and 1 to 2 tablespoons of coconut oil. Stir until smooth and creamy.
-Once the chocolate is completely melted use a medium size cookie scooper, add 1-2 tablespoons of chocolate to the bottom of each round section, tap pan then place in the freezer to harden for 10 minutes then prepare filling.
-Filling: In a food processor, add unsweetened shredded coconut, blend coconut first, then add the raspberries and sugar free maple syrup. Continue to blend until smooth. Add the coconut flour and pulse until just blended to achieve desired consistency.
-Spread 1 tablespoon raspberry filling evenly on top of each chocolate cup. Cover each cup with 2 tablespoons of melted chocolate, make sure to fully cover the raspberry filling.
-Place in the freezer for 20 minutes or until chocolate sets. Enjoy!
