Nondairy Chocolate Peppermint Cups

You only need three ingredients to make these Nondairy Chocolate Peppermint Cups.  They are a combination of nondairy chocolate, coconut butter, and coconut oil.   This is a great dessert to serve following your holiday meals.



Nondairy Chocolate Peppermint Cups

2 tablespoons of coconut oil
1 -2 teaspoons of peppermint extract
1/3 cup of coconut butter or you can substitute with 9 oz. of nondairy white chocolate chips
crushed candy cane, optional
-Use a round silicone pan. Set aside.
-Melt the nondairy dark chocolate chips and 1 tablespoon of coconut oil in a double boiler, stir until smooth.
-Use a 1-inch cookie scooper, add melted chocolate into the bottom of each round section. Tap silicone pan to smooth out chocolate. Freeze for 10 minutes or until hardened.
-In a saucepan melt the coconut butter then add the peppermint extract. Combine ingredients until smooth. Use a 1-inch cookie scooper to spoon melted coconut butter onto the first layer of chocolate. Place in the freezer to harden for 15 minutes.
-In the double boiler reheat the chocolate and add 1 tablespoon of coconut oil.  Stir until creamy and smooth.  Add the chocolate layer to the coconut butter layer.  Add crushed peppermint for the top, optional.
-Place in the freezer for 2 hours to harden.   Serve at room temperature and enjoy!
