Nondairy Chocolate Peanut Butter Oat Cups

Nondairy Chocolate Peanut Butter Oat Cups are a moist and delicious dessert.   Whether you want a protein boost or a healthy snack, this delicious and flavorful choice will make you want more.

 


 

Nondairy Chocolate Peanut Butter Oat Cups

Ingredients:
Crust:
1 cup of rolled oats
1 cup of creamy peanut butter or you can use almond butter
1 teaspoon of vanilla extract
½ cup of sugar free maple syrup
Filling:
4 tablespoons of all-natural creamy peanut butter or you can use almond butter
4 tablespoons of coconut butter
Topping:
1 cup of nondairy caramel chocolate chips, melted
1 tablespoon of coconut oil
Directions:
-Line a cupcake pan or silicone pan with cupcake liners.  Set aside.
-In a medium size bowl, add the peanut butter, vanilla extract and sugar free maple syrup. Combine ingredients well.
-Use a 1-inch cookie scooper and divide mixture into each liner.  Create a flat base on each cupcake liner. With a round 1-inch measuring spoon in the middle gently press in the center to make an indentation. Repeat the process for each liner, then freeze for 2 hours.
-In a double boiler add the peanut butter and coconut butter, stir until creamy and smooth.
-Remove the oat cups from the freezer, then add 1 tablespoon of the filling directly to the center.  Place back into the freezer for 15 minutes or until the filling hardens.
-In a double boiler or microwave, melt the nondairy caramel chocolate chips and 1 tablespoon of coconut oil.  Combine until smooth and creamy.
-Drizzle each with melted chocolate and place in the freezer for 15 minutes or until the chocolate hardens.  Enjoy!
