Nondairy Chocolate Covered Raspberry Bites

Nondairy Chocolate Covered Raspberry Bites are made from three simple ingredients – fresh raspberries, creamy peanut butter and nondairy milk chocolate.  These bites are quick and easy to make and they taste great.


Nondairy Chocolate Covered Raspberry Bites
Ingredients:
3 to 4 tablespoons of creamy peanut butter
1 to 2 tablespoons of coconut oil
Directions:
-Prepare a small round silicone pan.
-In a double boiler, add nondairy chocolate chips and 1 tablespoon of coconut oil. Stir until smooth.
-Add the raspberries to each round mold in the silicone pan. Then add a dollop of peanut butter on top of each raspberry.
-Heat chocolate in a double boiler then add 1 tablespoon of melted coconut oil or as needed. Stir until creamy and smooth.
-With a small cookie scooper, add melted chocolate to each section of the round silicone tray.
-Place the silicone tray in the freezer and chill for at least 20 to 30 minutes or until the chocolate sets. Enjoy!
