Start your year off with these Nondairy Chocolate Covered Blueberry Yogurt Clusters. They are a healthy breakfast that’s full of protein. They have a nondairy blueberry yogurt filling.
Nondairy Chocolate Covered Blueberry Yogurt Clusters
-In a medium size bowl, add the nondairy blueberry yogurt and peanut butter, mix until combined. Repeat the process to prepare the yogurt and peanut butter as needed. I made 12 clusters.
-Add 1 tablespoon of the yogurt mixture to a square silicone pan. Freeze for 2 hours or overnight.
-Melt nondairy chocolate and coconut oil in a double boiler until smooth. You can also melt chocolate for 30 second intervals in the microwave. Dip clusters in the chocolate then add to a baking sheet with parchment paper.
-Freeze for 10-15 minutes until set then drizzle with melted chocolate. Freeze again for 10 minutes. Serve and enjoy!
