Nondairy Chocolate Berry Cups

Nondairy Chocolate Berry Cups are a quick and easy dessert that is loaded with healthy berries like blueberries, blackberries, and strawberries.  It’s topped with decadent, nondairy chocolate.

 


 

Nondairy Chocolate Berry Cups

Chocolate:
1-2 tablespoons of coconut oil
Berry Filling:
1 1/2 cups of organic frozen berries
1/3 Cup of water
1 Tablespoon of cornstarch
1 Tablespoon of coconut sugar, (optional)
Directions:
-Add 1 1/2 cups of berries into a saucepan with 1/3 cup of water, 1 tablespoon of corn starch and 1 tablespoon of coconut sugar. Once the fruit is softened, mash fruit with a fork or potato masher then stir until combined and thickened. Set aside.
-Melt chocolate in a double boiler with 1 tablespoon of coconut oil, stir until creamy and smooth.
-In a silicone round pan, add 1 tablespoon of melted chocolate to each section. Freeze for 15 minutes then add 1 to 2 tablespoons of berry sauce on top of the hardened chocolate in each section. Freeze for 20 minutes.
-Drizzle melted chocolate on top of each round section and freeze for 30 minutes or longer until hardened. Remove from silicone pan and enjoy!
