Nondairy Almond Joy Bites

Everybody loves an Almond Joy bar.  These Nondairy Almond Joy Bites are made with nondairy chocolate, almonds and shredded coconut.  They are chewy and delicious as well as quick and easy to make.

 


 

Nondairy Almond Joy Bites

Ingredients:
2 tablespoons of agave nectar
8 raw almonds or, as desired
2 tablespoons of coconut oil, melted

Directions:
-In a food processor add the shredded coconut, agave nectar and coconut oil.  Process until sticky they scrape down the sides to get everything processed and combined.
-In a small silicone tray add the coconut mixture, then press down with a spoon.  Lay one almond on top of coconut mixture.
-In a double boiler, add ½ cup of nondairy caramel chocolate chips and ½ teaspoon of coconut oil, stir until smooth and creamy.  Melt additional chocolate if desired. Drizzle melted chocolate over top of each coconut section until coconut is covered.
-Place in the freezer for 4 hours or until hardened.  Enjoy!
