Non-Dairy Vanilla Blueberry Swirl Ice Cream is made with sugar free blueberry jam, along with all natural ingredients to make this cool and delicious dessert.
Nondairy Vanilla Blueberry Swirl Ice Cream
Equipment:
-blender or ice cream maker
Ingredients for Ice Cream:
2 cans of coconut milk 13.5 oz each,
or 3 1/2 Cups of homemade high-fat coconut milk
2/3 Cup of sugar free maple syrup or you can use a organic granulated sweetener of your choice.
2 Tablespoons of vanilla extract
1/8 to 1/4 Teaspoon of Himalayan salt (optional)
Optional additional ingredients after ice cream is made:
1/4 Cup of sugar free blueberry jam
Directions for Ice Cream:
-Place coconut milk, maple syrup (or other sweetener) and vanilla extract in a blender. Purée until sweetener dissolves, scraping down sides, if it’s necessary for about 30 seconds. Freeze in ice cream maker, according to the manufacturer directions. (You can freeze for 1/2 hour or until ice cream is somewhat thick then add blueberry jam). Swirl jam through with a knife and return canister to the freezer.) You can also freeze overnight.
-Add ice cream to bowl with other toppings or make ice cream cones. Enjoy!
