No Bake Vegan Brownies

No Bake Vegan Brownies are decadent and delicious.  They are made from homemade vegan icing, crushed almonds and walnuts, and Medjool dates.  These brownies are moist and chewy – perfect for breakfast or dessert!

 


 

No Bake Vegan Brownies

Ingredients:
1/2 cup of cacao powder
1/5 cups of raw pecans
1/5 cups of raw almonds
1/2 teaspoon of Himalayan salt
2 cups of medjool dates, 25 dates
Directions:
Brownies: In a food processor add the pecans, almonds, cacao powder and salt.  Combine until the nuts are crumbled. Then add the pitted dates and process until the dough forms.  Line a square pan with parchment paper and add the brownie dough to the pan.  Press down firmly across the pan until smooth.  You can also use the back of a measuring cup to smooth out the brownie dough. Set aside to create the frosting.
-With a handheld mixer, blend your favorite chocolate frosting.  Spread the chocolate frosting in an even layer across the brownies.   Refrigerate for 2 hours to set, then slice and enjoy!
