No Bake Coconut Chocolate Cups

No Bake Coconut Chocolate Cups are bite sized dessert cups that are made using shredded coconut and nondairy chocolate, along with a delicious nougat crust.  These cups are decadent and delicious.

 


 

No Bake Coconut Chocolate Cups

Ingredients:
Nougat Base
1 cup of coconut flour
1 ½ cups of almond flour
2/3 cups of creamy peanut butter
½ cup of sugar free maple syrup
2-4 tablespoons of unsweetened almond milk, as needed.

Coconut Layer:
1/8 cup of coconut oil, melted
1/2 cup of coconut milk
2 tablespoons of sugar free maple syrup
1 teaspoon of vanilla extract
1/4 teaspoon of Himalayan salt
1 1/2 cup of unsweetened coconut

Chocolate Layer:
1 cup of nondairy dark chocolate chips
1-2 tablespoons of coconut oil

Directions:
-To make the Nougat Layer:  In a large bowl, add all the nougat ingredients and combine well until it has a dough consistency.  If the dough is too dry, add an additional 1 tablespoon of unsweetened almond milk as needed for a good consistency.
-Add the dough to a round silicone pan, filling each section. You can also use an 8-inch square baking pan lined with parchment paper.  Smooth dough and place it in the freezer.
-Coconut Layer: Add the melted coconut oil and coconut milk to a medium size bowl and whisk to combine well.  Next add the shredded coconut and mix again until well combined.  Add to the silicone section over top of the nougat and smooth over with the back of a teaspoon then place into the freezer while you prepare the next the chocolate layer.
-Chocolate Layer:  In a double boiler, add the nondairy dark chocolate and coconut oil to a double boiler and stir until melted and smooth.
-With a 1 inch cookie scooper, add the melted chocolate then spread chocolate in each round section.  Place the silicone tray in the freezer for 2 hours or until it’s hardened then enjoy!
