No Bake Chocolate Strawberry Brownies

No Bake Chocolate Strawberry Brownies are made from crushed pecans, Medjool dates and nondairy chocolate.  The filling is made from fresh strawberries and shredded coconut to name a few.  They have a chewy texture to them.

No Bake Chocolate Strawberry Brownies
Brownie Base:
1 ½ cups of Medjool dates
2 cups of pecans
1/3 cup of cacao powder
1 teaspoon of vanilla extract
Pinch of Himalayan salt

Strawberry Layer:
2 ½ cups of fresh strawberries
2/4 cups of slivered almonds
3 tablespoons of shredded coconut
2 tablespoons of coconut oil

Chocolate Layer:
2/3 cups of coconut oil
4 tablespoons of sugar free maple syrup
2/3 cup of cacao powder
½ teaspoon of vanilla extract

-Brownie Base: In a food processor add the pecans and process until they resemble crumbs then add the dates, cacao powder, vanilla extract and Himalayan salt and process until well combined and a sticky dough is formed.  Add the mixture into a lined square pan and smooth over with the back of a spatula.  Place it in the freezer while preparing the next layer.
-Strawberry Layer: In a high-speed food processor add ingredients and process until combined and smooth.  Spoon the mixture on top of the base layer and smooth over with the spatula.  Place it into the freezer to set for about an hour.
-Chocolate Layer:  Add the melted coconut oil to a saucepan on low heat.  Then remove from the heat and add the sugar free maple syrup, vanilla extract and cacao powder.  Whisk until well combined.
-Pour the chocolate on top of the strawberry layer and make sure it is evenly spread.
-Place baking pan in the freezer overnight.
-Remove from the freezer to thaw then slice.   Store in an airtight container and keep in the freezer. Enjoy!
