No Bake Carrot Cake Bars

These No Bake Carrot Cake Bars are delicious and healthy.  Some key ingredients include walnuts and grated carrots.   They were topped off with a tasty vegan cream cheese frosting.

 


 

No Bake Carrot Cake Bars

Ingredients:
2 Cups of quick oats
1 Cup shredded carrot
1/4 Cup of unsweetened shredded coconut
1/2 Cup of walnuts, chopped
1 Teaspoon of cinnamon
1/2 Teaspoon of ginger
1/2 Cup of peanut butter
1/4 Cup of sugar free maple syrup
1/2 Teaspoon of vanilla extract
1 Egg replacer or 1 Tablespoon of ground flax plus 3 tablespoons of water
Pinch of Himalayan salt
Directions:
-Line a 8 by 8 inch pan with parchment paper, set aside.
-In a small bowl, prepare the egg replacer according to directions on packaging. Set aside to thicken.
-In a large bowl, combine the quick oats, shredded carrot, chopped walnuts, coconut, ground cinnamon, ginger and Himalayan salt. Mix well.
-In a medium saucepan, add the peanut butter and sugar free maple syrup, stir to combine until creamy then remove from heat and add vanilla extract. Add the peanut butter mixture to the large bowl with dry ingredients and egg replacer then combine well. Transfer to the 8 by 8 inch pan then use the bottom of a measuring cup or spatula to press down the layer until smooth.
-Refrigerate for at least 2 hours or overnight.
-Prepare your favorite vegan cream cheese frosting. Slice and enjoy!
