No Bake Blueberry Oat Bites

Vegan No Bake Blueberry Oat Bites are bite sized breakfast treats that are full of fiber and the blueberries are packed with antioxidants.  The key ingredients are rolled oats and homemade blueberry jam, and they are topped with a delicious nondairy chocolate.



No Bake Blueberry Oat Bites

Oat Crust:
1 1/2 cups +2 tablespoons of oats
1/2 cup + 1 tablespoon of creamy peanut butter
1/3 cup of sugar free maple syrup
Blueberry Filling:
2 Cups of blueberries fresh or frozen
1/3 Cup of water
1 Tablespoon of cornstarch
1 Tablespoon of coconut sugar, (optional)
Chocolate Topping:
1 tablespoon of coconut oil
-Add 2 cups of blueberries into a saucepan with 1/3 cup of water, 1 tablespoon of corn starch and 1 tablespoon of coconut sugar. Stir until combined and thickened. Set aside.
-In a medium bowl, add sugar free maple syrup, oats, peanut butter then combine well.
-In a silicone square pan, add 1 tablespoon of oat mixture. Then press down with the back of the spoon until smooth. Freeze for 15 minutes then add 1 to 2 tablespoons of blueberry jam to each section and freeze for 20 minutes.
-In a double boiler melt nondairy dark chocolate and coconut oil. Drizzle melted chocolate on top of each section and freeze for 30 minutes or longer until hardened. Remove from silicone pan and enjoy!
