This delicious Mediterranean Pizza is made using a thin cauliflower crust, sautéed spinach, artichoke hearts and Roma tomatoes. It’s great to serve for the Super Bowl.
Mediterranean Pizza
Ingredients:
1-2 Tablespoons of olive oil
1 Bag of fresh spinach, (stems removed)
2 Roma tomatoes, cut into thin round slices
1 Green pepper, sliced thin, (optional)
2 Cloves of garlic, minced
1 12 oz. jar (1/2 Cup of artichoke hearts in oil, drained well, sliced)
1 16 oz. jar of pizza sauce
2 Tablespoons of fresh basil
1 3/4 Cup of vegan mozzarella cheese, or as desired) sliced
1 11 oz. box of Cauliflower pizza crust, (2 in a box)
Handful of fresh basil leaves to garnish, (chopped)
Sprinkle of crush red pepper
Directions:
Preheat oven to 425F or according to directions on packaging.
-Cut green pepper, artichokes and tomatoes and set aside.
-Remove stems from spinach, then in large cast iron skillet sauté spinach along with minced garlic and 1 tablespoon of olive oil until wilted.
-Add pizza shells to a baking sheet with parchment paper.
-Use a pastry brush and 1 tablespoon of olive oil on 1 or 2 cauliflower pizza shells. Brush additional olive oil as desired. Then spoon on the pizza sauce along with 2 tablespoons of fresh chopped basil.
-Sprinkle vegan mozzarella cheese on top of the pizza crust then layer the sliced tomatoes on top. Add sauté spinach and chopped artichoke.
-Bake according to directions on packaging about 20 minutes until the vegetables are cooked . (I made two pizzas, but you can bake one, if desired). Remove from the oven and sprinkle with crushed red pepper and garnish with fresh chopped basil leaves. Drizzle with a little more olive oil before serving, if desired and enjoy!
