Try making this Mediterranean Chickpea Salad Sandwich for your next lunch. It’s quick and easy to make with chickpeas, onions, sun-dried tomatoes, plant based feta cheese, fresh basil and vegan mayo. I served it on some crusty, sourdough bread and topped it with romaine lettuce and sliced tomatoes. Absolutely delicious!
Mediterranean Chickpea Salad Sandwich
Ingredients:
1 16 ounce can of chickpeas, rinsed and drained
1 tablespoon of Italian seasoning
1 teaspoon of smoked paprika
Himalayan salt and pepper
1/2 white onion, chopped
1/4 cup of sun-dried tomatoes, drained and chopped
For Sandwich:
Artisan lettuce
1 tomato, sliced
1-2 tablespoons of vegan mayonnaise, or as desired
Directions:
-Add chickpeas to a large bowl. You can mash the chickpeas gently with a fork or potato masher.
-Add in the onions, sun-dried tomatoes, vegan feta cheese, seasoning, Himalayan salt and pepper. Combine ingredients then add vegan mayonnaise. Mix again and adjust seasoning accordingly to taste.
-Add sliced bread to a serving plate then add lettuce, spoon a generous amount of chickpea salad onto two slices of bread, add sliced tomatoes, garnish with fresh basil. You can also add other topping of choice. Enjoy!
