The next time you want a great salad, try this Mediterranean Lentil Salad. It’s hearty and delicious, and full of protein. Some key ingredients are fresh cooked lentils, grape tomatoes, non-dairy blue cheese crumbles and cucumber. It was topped with a tasty vinaigrette dressing.
Mediterranean Lentil Salad
Ingredients:
1 1/2 cup of dry lentils
1 cucumber peeled and halved
1 pint of cherry tomatoes, halved
1 white onion, chopped
1/2 cup of finely chopped cilantro
Directions:
-In a saucepan, prepare lentils according to directions on packaging.
-In a large bowl, combine all the ingredients for the salad.
-Pour desired vinaigrette dressing over the salad and toss to combine. Serve and enjoy!
