These Lime & Cherry Popsicles are a cool and refreshing treat that you can serve right after dinner. The lime and cherry combination had a sweet and sour taste, and the sliced cherries were chewy and delicious. Cherries are in season and there are many reasons to enjoy them – they are a good source of potassium, and they added a nice flavor to these popsicles. If you’ve never made popsicles before, then try this one. You will be happy you did.

Lime and Cherry Popsicles
Ingredients:
1/2 lb. limes, peeled (remove all the peel and white), about 3-4 small limes
1 1/2 Cups of water
1 1/4 Cups of ice
1/2 Cup of organic sugar or 2 to 3 Tablespoons of agave sweetener
1/2 lb. of cherries, pitted, a little more than a cup
Popsicle mold and sticks
Directions:
-In a blender add the limes, then remove the peel, add water ice and sweetener. Blend until sweetener is dissolved 30 to 60 seconds.
-Then cut the cherries in half or quarters.
-Evenly divide cherry pieces into popsicle molds. (10-2.5 oz. or 6-4 oz popsicles). Carefully pour the limeade mixture into each mold until almost full. Try to leave a little room as it freezes, it will expand a little. Freeze until solid overnight until frozen. Take out of the freezer the next day. Enjoy!
