Lentil Sloppy Joe’s

My Lentil Sloppy Joes are made with green lentils, a delicious tomato sauce, white onions, garlic and a tasty blend of spices.  They are great for lunch or for dinner.


Lentil Sloppy Joe’s

1 Teaspoon of olive oil
1 Cup of dry green lentils
1 Medium white onion, chopped
1-2 Cloves of garlic, chopped
1 Teaspoon of smoked paprika
1 Teaspoon of chili powder
1/2 Teaspoon Cajun powder
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
2 Cups of water
1 Tablespoon of ketchup, optional
1 Tablespoon of sugar free maple syrup or a maple syrup of your choice
2 Teaspoons of apple cider vinegar
1 Tablespoon of soy sauce
3 Tablespoons of tomato paste
4 Gluten free, buns

-In a large cast iron skillet, add the olive oil, garlic and onions.
-Cook over medium heat for 3 minutes, mix occasionally.
-Add the smoked paprika, Italian seasoning, chili powder, Himalayan salt and combine. Cook for 2 minutes over medium heat.
-Add the lentils and water and bring to a boil. Then when it starts boiling reduce to simmer and simmer for 25-30 minutes until water is absorbed and the lentils are softer. In a small dish mix together the sugar free maple syrup, apple cider vinegar, ketchup (optional), soy sauce and tomato paste. Drain any excess water from lentils and add to the skillet with onions.
-Continue cooking over low heat and add the sauce mixture to the lentils in the large skillet. (You can add more sauce to the skillet if desired, depending on taste). Mix until it’s well coated. Add lettuce to the buns, then divide the lentils on to each of the buns. Add mustard, ketchup and your favorite toppings. Enjoy!
