I made a delicious Lemon Pasta dish for dinner recently. It was quick and easy to make as I used some brown rice pasta, sautéed spinach, fresh squeezed lemon juice and a light and creamy homemade white sauce. The pasta was full of flavor!
8 oz. of pasta cooked or as desired (use gluten, if required)
1-2 Tablespoons of olive oil
1 Bunch of spinach, remove stems
2 Lemons, juiced
2 Teaspoons of lemon zest
2 Cloves of garlic, minced
Garnish with basil
Himalayan salt and pepper
-Prepare spaghetti in a large pot according to directions on packaging.
-In a cast iron skillet, heat olive oil then add minced garlic. Add spinach and sauté until wilted then set aside.
-In a small sauce pan add coconut milk, vegan feta cheese, fresh lemon juice and lemon zest. You can also add a little bit of olive oil to thin it out. Then simmer at medium heat for 5 minutes until smooth and creamy. Stir well then season with salt and pepper as desired.
-Add the cooked pasta to the skillet with spinach then add lemon sauce and cook for 4 minutes more. Garnish with basil and parmesan serve and enjoy!
