Lemon Orzo with Spinach and Cherry Tomatoes is a great recipe with a rich, Mediterranean flavor. The orzo, spinach, vegan parmesan cheese and tomatoes are some key ingredients. It can be served by itself or as a side dish for cookouts or dinner with friends.
Lemon Orzo with Spinach and Cherry Tomato’s
Ingredients:
1.5 Cups of dry orzo pasta
Plant Based chi-kin strips
1 Tablespoon of olive oil
1 shallot, sliced
1/4 Teaspoon of smoked paprika
Himalayan salt and pepper
1/2 fresh lemon, juiced
3 Tablespoons of vegan butter
1.5 oz. grated vegan parmesan cheese
13 cherry tomatoes, sliced (or as desired)
1 Bunch of spinach, stems removed
3 to 4 Tablespoons of vegetable broth, or as needed
Directions:
-Prepare orzo in a medium pot of water or vegetable broth to boil according to directions on packaging. Then drain orzo in a wire-mesh strainer and set aside.
-Prepare spinach and remove stems, then set aside.
-Slice tomatoes in half and slice shallots and set aside.
-Bake plant based strips according to directions on packaging.
-Heat a cast iron skillet, to medium heat with 1 tablespoon of olive oil, minced garlic, shallots and sliced tomatoes and sauté until tender approximately 4-6 minutes. Then add spinach and sauté for another 4 minutes or until wilted.
-Season with smoked paprika, Himalayan salt and pepper to taste. Add in lemon juice and cooked orzo to the pan. Add vegan butter and vegan Parmesan cheese then season again to taste if desired. You can add a little vegetable broth to the orzo if it starts sticking to the pan. Serve with sliced plant based strips , lemon wedges and your favorite sauce. Enjoy!
