This Kale & Apple Salad was made using some tender fresh kale, along with sweet and delicious red apples. This autumn salad is so tasty, and it’s simple and easy to make. Besides the main two ingredients, it has dried cranberries, vegan feta cheese, and a delicious poppy seed dressing.

Kale and Apple Salad
Ingredients:
3 Cups of kale, chopped
3 Red apples, chopped
4-5 Strips of vegan bacon cooked and chopped
1/4 Cup of dried cranberries
1/4 Cup of vegan feta cheese, sprinkled
1/4 Cup of sesame seeds
Lemon Dressing:
1/4 Cup of olive oil
2 Tablespoons of fresh lemon juice
2 Tablespoon of red wine vinegar
1 Tablespoon of Dijon mustard
1 Clove of garlic, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/8 Teaspoon of black pepper
1 Teaspoon of honey or organic sugar, (adjust according to taste)
Directions:
-In a large bowl, combine the chopped kale, chopped apple, vegan bacon, cranberries, sesame seeds and feta cheese. Toss ingredients together.
-To make the lemon dressing: Whisk together all the dressing ingredients in a medium size bowl. Add the desired amount to the salad and enjoy!
