For dinner try making this delicious Hummus Brown Rice Pasta. I used brown rice pasta, sun dried tomatoes, sautéed spinach, and a tasty hummus sauce that really accentuated the flavor.
Hummus Brown Rice Pasta
10 oz. of brown rice fusilli pasta
3 Cups of spinach
1-2 Cloves of garlic, minced
12 Sun-dried tomatoes in oil, chopped
5 Tablespoons of hummus, or as desired
3 Tablespoons of nutritional yeast
Himalayan and pepper, as desired
1/2 Teaspoon of Italian seasoning
1/2 Cup of basil, chopped
-In a medium size sauce pan. Cook the pasta according to directions on packaging.
-In a large pot add 2 Tablespoons of olive oil and minced garlic and cook for about 2 minutes.
-Cut the sun-dried tomatoes into slices, then wash the baby spinach and pat dry.
-Add the spinach and sun- dried tomatoes to the pot and sauté until the spinach wilts.
-Add the cooked pasta then add nutritional yeast, hummus, chopped basil and seasoning Toss and serve immediately. Enjoy!
