For a really cool appetizer, try making this Hummus Board.  The ingredients include fresh hummus, green olives, sun dried tomatoes, roasted chickpeas, green peppers and cherry tomatoes!  You can serve it with warm, crusty bread.

 


Hummus Board

Ingredients:
2 Cups of store-bought hummus
1 Green pepper, chopped
1/2 Pint of cherry tomatoes, halved
1 Can of chickpeas, rinsed and drained
1 Jar of green olives, pitted
1 Jar of sun-dried tomatoes, or as desired
Warm crusty bread, sliced

Seasoning:
1 Tablespoon of Italian seasoning
1 Teaspoon of smoked paprika
1 Teaspoon of Cajun seasoning
1 Teaspoon of onion powder
1 Tablespoon of olive oil

Directions:
-Preheat oven to 400F degrees.
-Add the chickpeas to a large bowl then add seasoning and olive oil. Mix well then add to a baking sheet with parchment paper.
-Roast in the oven for 20 – 25 minutes or until the chickpeas are roasted and a little crispy.
-In the same large bowl, add the olives, sun-dried tomatoes, green pepper, cherry tomatoes and roasted chickpeas. Combine ingredients then add additional seasoning if desired.
-On a wooden cutting board add hummus in sections then spread until smooth over the board. Top with seasoned vegetables and drizzle with a little olive oil. Serve with warm crusty bread. Enjoy!
